Pork Chops with Herbs (So Easy!)

Easy, lean, high in protein, and delicious. Try this one tonight - it's pretty quick for a slowcooker! One ingredient listed is "poultry seasoning," but I strongly suggest that you mix up your own rather than purchasing yet another jar of something. It will help ensure that you use up the herbs you have before they go bad! Or another great idea... mix some up from my pantry next time you visit! 😀 I'll link to a suggested combo.

Ingredients

  • 4 thickly cut pork loin chops (thin ones will overcook and be tough)
  • 1 1/2 tsp salt
  • 1 1/2 tsp pepper
  • 1 Tbsp poultry seasoning (here's my suggested combo)
  • 1 Tbsp paprika
  • 1 Tbsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 cup chicken broth

Equipment

  • Slowcooker
  • Sharp knife to score meat
  • Small mixing bowl
  • Whisk

Instructions

  1. Score the meat by slicing diagonal crisscross pattern onto each side of each chop. 
  2. Sprinkle the salt and pepper onto the chops.
  3. Mix together all the dry herbs.
  4. Remove 2 tsp of the herb mixture. Use that 2 tsp of set aside to rub into each side of the chops.
  5. Add the chicken brother to the bowl with the herb mixture and whisk together. Pour into slowcooker.
  6. Add chops on top of liquid in slowcooker and set for 1.5 hours on high. If you think of it, spoon some liquid over the chops every once in a while during cooking.
  7. Check with thermometer to ensure they've cooked to at least 145. You can always cook for another 10 minutes... but I think setting the timer to 1.5 hours is good.
  8. Serve and enjoy!
