This is actually my favorite tomato sauce. It’s also the simplest. I got it from Marcella Hazan. Because there are so few ingredients, it’s important to use really good ingredients...Serve with a good parm. That’s it. This is a really classic Italian sauce and, for my money, it’s the best.

Ingredients

  • 1 whte onion
  • 5 Tbls unsalted butter
  • 1 28 oz whole San Marzano tomatoes (Cento or Mutti brands are good)
  • Fresh basil
  • Pasta
  • Parmesan

Equipment

  • Large pot to cook your pasta
  • Large sauce pan (or deep skillet)
  • Sturdy wooden spoon
  • Dish to serve

Instructions

  1. Cut the onio in half. You can even leave the skin on. Place it cut-side down in the pan with the butter and tomatoes in their juice. Bring to a simmer on medium heat and allow to simmer for about 45 minutes. Stir occasionally and as the tomatoes soften, smash them with the back of your spoon. Discard the onion.
  2. Cook the pasta of your choice and toss it with some torn basil and the sauce.
