
WORDS OF WISDOM FROM MY OTHER FAVORITE ITALIAN
This is actually my favorite tomato sauce. It’s also the simplest. I got it from Marcella Hazan. Because there are so few ingredients, it’s important to use really good ingredients...Serve with a good parm. That’s it. This is a really classic Italian sauce and, for my money, it’s the best.
Ingredients
- 1 whte onion
- 5 Tbls unsalted butter
- 1 28 oz whole San Marzano tomatoes (Cento or Mutti brands are good)
- Fresh basil
- Pasta
- Parmesan
Equipment
- Large pot to cook your pasta
- Large sauce pan (or deep skillet)
- Sturdy wooden spoon
- Dish to serve
Instructions
- Cut the onio in half. You can even leave the skin on. Place it cut-side down in the pan with the butter and tomatoes in their juice. Bring to a simmer on medium heat and allow to simmer for about 45 minutes. Stir occasionally and as the tomatoes soften, smash them with the back of your spoon. Discard the onion.
- Cook the pasta of your choice and toss it with some torn basil and the sauce.
