Ingredients
- Boneless, skinless chicken thighs or tenders
- Salsa (we like Trader Joe's because no chunks)
- Taco seasoning
- 2-3 limes
- Fresh cilantro
- Cooking spray
- Tortillas
- OPTIONAL: Cotija (or other) cheese, avacado/guacamole, lettuce
Equipment
- Slow cooker
- Nifty gadget to remove stems from the cilantro
- Pulverizing device to de-chunk your salsa (unless you like chunks)
Instructions
- Spray clow cooker.
- Trim any excess fat from chicken and place chicken in slow cooker.
- Shake taco seasoning on chicken. Use about as much as you think you're gonna need.
- OPTIONAL STEP: pulverize chunky salsa with small blender or handheld pulverizing tool.
- Pour salsa over chicken. Use about as much as you think you're gonna need.
- De-stem cilantro and chop. Sprinkle on top of chicken. You can save a little as garnish, but go ahead and use the rest.
- Squeeze a couple limes over everthing in slow cooker.
- Cook on low for 6 hours or on high for 4 hours.
- When the chicken is ready, shred with forks and serve with warm tortillas and other toppings.
