Karenmarie’s Chicken-Lime Tacos

Ingredients

  • Boneless, skinless chicken thighs or tenders
  • Salsa (we like Trader Joe's because no chunks)
  • Taco seasoning
  • 2-3 limes
  • Fresh cilantro
  • Cooking spray
  • Tortillas
  • OPTIONAL: Cotija (or other) cheese, avacado/guacamole, lettuce

Equipment

  • Slow cooker
  • Nifty gadget to remove stems from the cilantro
  • Pulverizing device to de-chunk your salsa (unless you like chunks)

Instructions

  1. Spray clow cooker.
  2. Trim any excess fat from chicken and place chicken in slow cooker.
  3. Shake taco seasoning on chicken. Use about as much as you think you're gonna need.
  4. OPTIONAL STEP: pulverize chunky salsa with small blender or handheld pulverizing tool. 
  5. Pour salsa over chicken. Use about as much as you think you're gonna need.
  6. De-stem cilantro and chop. Sprinkle on top of chicken. You can save a little as garnish, but go ahead and use the rest. 
  7. Squeeze a couple limes over everthing in slow cooker. 
  8. Cook on low for 6 hours or on high for 4 hours.
  9. When the chicken is ready, shred with forks and serve with warm tortillas and other toppings.
