MORE FROM MY COUSIN KELLY...
This one is my sister-in-law Susie’s recipe. She let me enter it in a Salt Lake City baking contest, and I won 3rd place and got a new Belgian waffle iron, a chef coat and a chef hat. The judges were fascinated because they said it was like a savory version of cream puff dough. I'm sure that's the only reason I won 3rd because there were hundreds of people cooking that day!
Ingredients
- 1 4oz can diced jalapenos
- 1/4 c chopped onion
- 1 clove garlic
- 1/8 tsp cayenne
- 1 cup grated swiss cheese
- 3 cups grated cheddar
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 eggs
- 1 1/2 c flour
- 1/2 cup butter, plus some to grease pan
Equipment
- Large sauce pan
- Grater
- 9x13 baking pan
- Sturdy mixing spoon
Instructions
- Preheat oven to 375°F. Grate cheeses.
- Melt butter. Add flour and stir until ball is formed. Remove from heat.
- Add 1 egg and combine. Repeat adding rest of eggs one at a time.
- Add rest of the ingredients and stir until blended. Pour into 9x13 greased pan. Bake for 40-45 minutes.
