
Ok, this recipe has nothing to do with Hattie's Hat...
But whenever I think of delicious meatloaf, I think of Hattie's Hat restaurant in the Ballard neighborhood of Seattle. I loved that place! This recipe, however, is a FODMAP-friendly version that is also very tasty.
Ingredients
Sauce
- 1/2 cup (1 pound) no-fructose ketchup (like Simply Heinz or low FODMAP FODY brands)
- 1/4 cup brown sugar, packed
- 1 Tbsp plus 1 tsp balsamic vinegar
Meatloaf
- 3/4 c dry bread crumbs (gluten-free if needed)
- 1/2 c milk (lactose-free to make it FODMAP friendly)
- 2 lbs ground meat (preferable 1 1/2 lb beef, 1/2 lb pork but can be just beef)
- 2 large eggs, room temp
- 1/3 c finely chopped Italian (flat-leaf) parsley
- 1/3 c finely chopped scallion (greens only for FODMAP friendly... otherwise any onion)
- 2 tsp garlic-infused olive oil
- 1 tsp kosher salt
- 1/2 tsp dried thyme
- ground pepper
- 4 slices of bacon
Equipment
- Large mixing bowl
- 2 smaller bowls
- Long baking/casserole dish or roasting pan
- Meat thermometer
- Whisk
- Sturdy mixing spoon
Instructions
- Move rack to center of oven and preheat to 350°F.
- Whisk the sauce ingredients together in a small bowl; set aside.
- In large bowl mix together the bread crumbs and milk; let the bread crumbs soften for 5 minutes.
- Add the meat, eggs, parsley, scallions, olive oil, salt, thyme, and a generous amount of pepper to the bread crumb mixture and use yoru hands to mix well.
- Form into a shallow oval loaf shape and 9 x 6 x 2 inches in your baking dish. Pour about half the sauce on top and spread around to coat the meatloaf; reserve the rest to serve alongside the the cooked meatloaf.
- Drape the bacon over the meatloaf on a diagonal and tuck the ends underneath. Bake for about 1 hour until meat is firm and cooked through and the bacon is crisp. The meat thermometer inserted in center should read 167°F. If bacon isn't crisp enough for you, turn on broiler and cook for another minute - but watch closely so it doesn't burn.
- You can serve it up immediately, but leftovers also make great sandwiches.
