Ingredients
- 2 Tbls butter
- 1/2 c Parmesan cheese
- 1/4 c yellow cornmeal
- 1/4 c flour
- 1/2 tsp pepper
- 1 tsp Spanish or smoked paprika (as long as you like that smoked paprika flavor)
- 2 lbs rockfish (snapper), skinless & boneless; could also use bluefish, ocian perch or cod
Equipment
- Clean paper bag; like a large lunch bag (yeah... the size I get to scoop the cat litter is perfect, but I don't really like to think about it...)
- Large baking dish (like lasagna)
- Small bowl to melt butter
Instructions
- Preheat oven to 400°F.
- Melt the butter in microwave and pour into the baking pan (cuz it probably won't fit in your microwave).
- Combine the Parmesan, cornmeal, flour, pepper, and paprika together in a paper bag.
- Place a filet in bag and shake to coat. Remove and place in baking dish.
- Repeat step 4 for each filet.
- Turn each filet over once to coat with butter, and then shake the remaining Parmesan/flour/cornmeal mixture onto the fish.
- Bake until golden brown and the fish flakes apart when tested with a fork, approximately 15-20 minutes.
