WORDS OF WISDOM FROM THE CHEF(S)
Like the Any Day Chocolate Cake, this one is super easy, one layer (so no pressure to frost it!), and can be made from ingredients you almost always have on hand. And it's nice to have an option for our chocolate-hating brethren.
Ingredients
- 1 1/3 c flour
- 2/3 c. sugar
- 2 tsp baking powder
- 1/8 tsp nutmeg or allspice
- 2/3 c milk
- 1/4 c. butter, softened
- 1 egg, room temperature
- 1 tsp vanilla
- 1/2 c pecans, chopped (or other nuts), plus some to decorate the top if you want
Equipment
- Large mixing bowl
- Electric mixer
- 9 in round cake pan (or 8-inch and then plan to cook 5 min longer)
- Parchment paper (optional)
- Whisk
- Sturdy mixing spoon
Instructions
- Preheat oven to 350°F. Grease pan & dust with flour. (Line the bottom with piece of parchment if you want... cut in circle to fit.)
- Whisk flour, sugar, baking powder, and nutmeg together in mixing bowl to combine. Then add the rest of the ingredients EXCEPT THE NUTS and beat on low until combined. Then mix for another minute on medium.
- Add the nuts and stir with spoon. Pour into greased pan and bake for 20-25 minutes or until toothpick comes out clean.
- Cool in pan on rack for 5 minutes before remving cake to rack. Serve with whipped cream or ice cream.
