Any Day Chocolate Cake

You can whip this up with ingredients you probably already have on hand. And it's not too big - only one layer - so it's a great option for everyday or for a small gathering. I'll also add a busy-day not-chocolate option!

Ingredients

  • 1 c flour
  • 1 c sugar
  • 1/4 c unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 teaspoon baking soda
  • 3/4 c milk 
  • 1/4 c butter, plus some to grease pan
  • 1/2 tsp vanilla
  • 1 egg, room temperature

Equipment

  • Large mixing bowl
  • Electric mixer
  • 9 inch round cake pan
  • Parchment paper (optional)
  • Whisk
  • Sturdy mixing spoon

Instructions

  1. Preheat oven to 350°F. Grease cake pan (add the parchment on bottom if you want) & dust with flour.
  2. In large mixing bowl, whisk together the dry ingredients to combine. 
  3. Add milk, butter, and vanilla and beat with a mixer on low to combine. Then turn up to medium speed for 2 minutes. Add the egg and beat for 2 more minutes.
  4. Pour into cake pan and bake for 30-35 minutes until toothpick in center comes out clean. Cool cake in pan on rack for 10 minutes and then remove and allow to continue cooling on rack. Serve plain with ice cream  or dust cake with powdered sugar just before serving.
