Giant Ice Cream Cookie Sandwich

This has been Tim's odds-on favorite birthday cake ever since he was little. It is a bit challenging getting the candles into the frozen cookie dough!

Ingredients

  • 3/4 c flour
  • 3/4 tsp baking soda
  • 1/2 c butter, softened; some extra to grease cookie sheets
  • 1/3 c brown sugar, packed
  • 1 tsp vanilla
  • 1 1/4 c old fashioned oats (OPTIONAL:  oats in cookies are always even tastier if you toast them in oven first; spread on cookie sheet at 350°F for 15 minutes; but if you don't have time, skip it)
  • 1/3 c PLUS 2 Tblsp semisweet chocolate chips (you might use mini chips for the 1/3 cup; they go around icecream)
  • 1 quart ice cream, slightly softened

Equipment

  • Large mixing bowl 
  • Smaller bowl
  • 2 cookie sheets
  • Electric mixer
  • Sharp knife to cut top cookie 
  • Cake plate or serving plate
  • Sturdy mixing spoon

Instructions

  1. Preheat oven to 350°F and lightly grease 2 cookie sheets.
  2. Whisk together flour and baking soda.
  3. Beat butter, sugar, and vanilla until fluffy. (Fluffy again! Sorry... I still don't know what fluffy looks like.)
  4. Stir in oats and the with spoon until blended. Divide dough in half.
  5. Place half in middle of each cookie sheet and spread into an 8-inch circle. Sprinkle ONE cookie with the remaining 2 Tbls of choc chips. (It's going to be the top piece. Very pretty.) Slice the top piece like a pizza into 8 pieces but leave on cookie sheet to bake.
  6. Bake both large cookies for 15 minutes, rotating and moving them around as need to cook evenly in your oven. They should be light brown and crisp looking.
  7. Remove and cool on sheets for 10 minutes before removing to racks. Allow to completely cool before assembling pie.
  8. Re-cut the top cookie into the 8 pieces. Set one piece aside. Place the other, plain cookie flat-side-up on your serving plate. Quickly spread the icecream all over the cookie as evenly as possible.
  9. Arrange the other 7 pieces on top of the icecream. The space between the pieces allows you to cut the cake! Press teh other chips inot the icecream around the sides.
  10. Freeze until the icecream is firm. Eat that 8th cookie piece while you wait.
