
WORDS OF WISDOM FROM THE CHEF
This is my favorite thing to bake when I'm craving something sweet! Instead of vanilla extract I use cake batter extract, and I bake it in a 8x11 inch pan to get thicker cookie bars. Bake for 35 minutes.
(These cheery cookies are a perfect match for Swan's personality!)
Ingredients
- 1 c sugar (set aside 2 Tbs for topping)
- 1 c butter, unsalted, room temp
- 2 large eggs, room temp
- 2 tsp vanilla (or Swan uses cake batter extract!)
- 2 1/2 c flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 c rainbow jimmies sprinkles (Yes, you could also add mini choc chips to the mix!)
Equipment
- 2 mixing bowls
- 9 x 13 in baking pan (or 8 x 11)
- Parchment paper (optional)
- Electric mixer
- Sturdy mixing spoon
- Cooling rack
Instructions
- Preheat oven to 350°F. Line pan with parchment paper and/or lightly grease.
- In large mixing bowl, add butter and sugar. Cream together with mixer until fluffy, about one minute.Add eggs and vanilla and mix another minute until fluffiness achieved once again.
- In a separate bowl, add flour, baking powder, and salt. Whisk or sift together to remove lumps. Gently stir dry ingredients into wet ingredients until just incorporated.
- Pour into prepared pan and use a spatula to spread evenly to the edges. Batter will be thick. Sprinkle reserved sugar evenly over the top of the batter.
- Bake for about 20-22 minutes (longer if using smaller pan for thicker cookies) or until lightly browned around the edges and bars are set in the center.
- Place pan onto a wire rack and allow to cool completely before removing and slicing.
