MORE FROM MY COUSIN KELLY...

This one is my sister-in-law Susie’s recipe. She let me enter it in a Salt Lake City baking contest, and I won 3rd place and got a new Belgian waffle iron, a chef coat and a chef hat. The judges were fascinated because they said it was like a savory version of cream puff dough. I'm sure that's the only reason I won 3rd because there were hundreds of people cooking that day!

Ingredients

  • 1 4oz can diced jalapenos
  • 1/4 c chopped onion
  • 1 clove garlic
  • 1/8 tsp cayenne
  • 1 cup grated swiss cheese
  • 3 cups grated cheddar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 eggs
  • 1 1/2 c flour
  • 1/2 cup butter, plus some to grease pan

Equipment

  • Large sauce pan
  • Grater
  • 9x13 baking pan
  • Sturdy mixing spoon

Instructions

  1. Preheat oven to 375°F. Grate cheeses.
  2. Melt butter. Add flour and stir until ball is formed. Remove from heat.
  3. Add 1 egg and combine. Repeat adding rest of eggs one at a time.
  4. Add rest of the ingredients and stir until blended. Pour into 9x13 greased pan. Bake for 40-45 minutes.
