Colleen’s Beef-Veggie Soup (aka Hillbilly Soup!)

Ingredients

  • 1 lb burger
  • 32 oz beef broth
  • 1 small can tomato paste
  • 2 Tbls Worcestershire sauce
  • 1/2 Tbls dried parsley
  • 1 tsp oregano
  • 1/2 tsp each: garlic salt, seasoned salt, seasoned pepper
  • Potatoes, onion, carrots, corn, green beans

Equipment

  • Large skillet or sauce pan
  • Medium bowl
  • Slowcooker
  • Whisk, sturdy wooden spoon

Instructions

  1. Brown the burger, drain, and set aside in bowl.
  2. Over low flame, whisk together the broth, tomato paste, and worcestershire sauce. Pour into slowcooker.
  3. Add burger and remaining ingredients.
  4. Cook all damn day, and enjoy. 🙂 
  5. (If you use any frozen veggies, add those just 30 minutes before serving.)
